Today I want to share a yummy cookie bar recipe with y'all! Maybe you have seen them or maybe you haven't. All I can say is you've got to make them. I found these Pecan Chewies a couple months back on Southern Bite. Then they popped up again on another blog with great reviews from both, so I knew I had to bake them.
These Pecan Chewies are sort of a cross between a Butterscotch cookie bar and a shortbread cookie, but filled with pecans! The edges are crispy and the middle is soft and chewy just like the name. I can bet that you probably have all the ingredients right in your pantry.
I have already made these cookies twice since posting this recipe, because they are that good. I plan on baking up another batch to take up to our families next week for the Thanksgiving holiday. I hope you'll give this recipe a try.

Pecan Chewies - Southern Pecan Cookie Bars
Pecan Chewies are a traditional southern cookie bar filled with butter, brown sugar and pecans. These cookie bars are chewy on the inside and crispy on the outside.

Ingredients
- 2 sticks butter, melted
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 eggs, beaten
- 2 cups self-rising flour (do not substitute)
- 1 cup pecans pieces
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven to 300 degrees. Melt butter, add sugars, and blend well by hand.
- Add beaten eggs, stir well.
- Add flour and stir until all lumps are gone. Add pecans and vanilla.
- Pour into a greased and floured 9 x 13 baking dish.
- Bake approximately 40 to 50 minutes watch closely so they don't over cook.
- You want them to retain their chewiness.
Notes:
If you do not have any self rising flour on hand you can make your own.
For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. Mix to combine and continue with recipe.
