Creamy Chicken Noodle Bake

Yesterday was casserole day again. The day really got away from me and before I knew it, it was dinner time, so made something that didn't take a long time to prepare. Besides "Chicken Spaghetti" this is another creamy noodle dish that we like, minus the long prep time. I found this recipe on a recipe newsletter awhile back and adapted it more my taste.

Instead of cracker topping I used a Panko breading. Sometimes I just use shredded cheese. How can you go wrong with cheese especially in my house if I want my kiddos to eat something all I have to do it top it with cheese. If you want a quick & easy dinner this would be perfect served with a salad, hot rolls or french bread.

My sweet boy Carson wanted to be included in this post. He was so proud of bread that he buttered. How could I not include it.

Creamy Chicken Noodle Bake

3 - cups cooked chicken, cut up into bite size pieces
2 - 10. 3/4 oz cans cream of chicken soup 1 1/4 c- cups milk
1 - 10-oz. pkg. frozen peas or mixed vegetables
1 - 12 oz - package wide egg noodles, cooked (al dente)
2 - cups cheddar cheese, shredded
2 - tablespoons melted butter

salt and pepper, to taste
panko bread crumb topping, optional
2 - tablespoons butter, melted

Preheat oven to 350 degrees. Brown the chicken in a skillet with a bit of olive oil or use a stove top grill. In a large bowl mix together  the chicken, soups, milk, melted butter and peas.

Add cooked noodles and  1 cup cheese; stir until blended. Add mixture to a greased 13 x 9 inch baking dish. Top with panko breading or with additional 1 cup cheddar cheese.

Bake for 30 minutes or until casserole is hot and bubbly and breading is light golden brown.

Panko Breading Topping: Combine cracker crumbs with melted butter. Mix together and sprinkle on top of casserole and bake as directed. Serves 4 to 6.

That looks so good, what a lovely but simple family meal. I make something that is quite similar, I'll need to try your version. :)

Hey, I have this dish in the oven as we speak! I got a little bit confused while making it, though ... in the pictorial directions, you stated to mix the 2 Tb melted butter in with the soup mixture, but in the written directions at the bottom, you stated to pour that butter over the cheese topping. I don't supposed it matters a great deal - as my husband said, "It has butter in it - it's all good!" LOL! Anyway, I definitely can't wait to eat dinner tonight! Thanks for such a wonderful blog ~ you are now the first site I turn to when it comes time to make my weekly menu!

Well, the verdict is in: the family LOVED this casserole! Thanks for another winning recipe!

Kanga I am so glad you liked the recipe. Thank you for letting me know about the butter. I fixed it in the directions so nobody else gets confused.

What is Coronado Seasoning? I am a spice nut and would love to try something new. I get most of my spices from Penzy's - they have the freshest/tastiest herbs and spices.

Quick question: I'm new to casserole baking (Just a college student), and I was wondering if you needed to fix some of it ahead of time where would you stop at before you baked it?
Would it be okay to throw it all in the baking dish together and put it in the fridge before putting it in the oven? Or should I keep the items separate until time to bake?
Thanks! Sorry if this is a silly question. I'm learning!

Hi, this chicken noodle casserole is in the oven baking. Can't wait to taste it.

What is in Coronado seasoning or Paula Deen's house seasoning? I used poultry seasoning on the chicken as it was being grilled.

I enjoy reading your blog and throughout the year plan on cooking some more of these recipes and maybe even a dessert.

Hi, there is a link above to paula deen house seasoning recipe above in this post. Coronado Seasoning is just a all purpose seasoning. You can use what ever you have on hand. I recommend the house seasoning.

do you think this recipe could be put in the freezer (im making this for the first time and if i like it i want to make it and freeze)
Tina Butler said…
Tabby if you do decide on freezing this casserole. Do so before you bake it. Just assemble the whole casserole and cover with plastic wrap and then with foil all the way around the dish. Remove from freezer thaw and bake. Pasta can get a bit mushy when frozen so keep that in mind. I have never froze this casserole so I do not know the end result.

I just made your Creamy Chicken Noodle Bake and it was wonderful. It's cold and rainy here and it was the perfect dish. Will make it again for sure. Also made the turkey stuffing roll-ups the other night and they were a big hit. Love your site, isn't a day goes by that I don't visit.

Thanks for sharing this with us. I sauteed the chicken instead of grilling with garlic salt and I made this for Mom's Crazy Cooking Challenge (will post on the 7th) and made a 1/2 portion and took 1/2 to a friend who asked me for the recipe as they loved it! It is a recipe that I will make in the future :)

I am looking forward to trying the recipe soon! Just curious if anyone has had luck with freezing this. I do a big cook and freeze about once a month and am hoping to add this to the list! If anyone has frozen this, I'm curious to find out how it turned out. Thanks!

First of all, this page has the MOST WONDERFUL recipes all in one place that I have ever found, and I'm completely addicted. I have a zillion recipe books, but I'll admit I rarely use them. It's a variety of stuff that appeases the masses, which makes money, but not completely useful.
Secondly, this particular recipe I wasn't sure that my boys would eat. They're not big fans of chicken spaghetti, "spaghetti should have tomato sauce," to quote my 8 yr old. I made it anyway because I couldn't get it out of my head that this was going to be delicious. Well, long story short, it was devoured! Leftovers the next day were happily eaten! Thank you for a recipe that pleases my WHOLE family!
P.S. Have you ever thought about turning this into a printed book? I would surely love to have a "one-stop" recipe book!

Oh my...I want to cry! My mother cooked this for me on my 20th birthday, the last one she was alive for. She didn't add peas, and she had the cracker topping. It's a simple recipe, but one I have looked for for over 25 years. Thank you for sharing this. I will cook this on my birthday (along with Veg-All casserole in honor of her. Thank you again.

Love this recipe!!! Just pulled it out of the oven and both my husband and I loved it. Only change I made was one can of cream of onion and the other cream of chicken. Turned out great!!! This is definitely a keeper.

This is the Ultimate Comfort Food! I started by broiling up some slightly pounded down chicken breasts w/ Paula's Seasoning. DH had got some generic of a generic low sod. Cream of Chicken so I felt we were going to need more salt. So I sautéed up an onion w/ a couple TBS of margarine & 3/4c hot fortified w/ chicken flav "Better then Boullion". & then a can of mushrooms, since Peas don't roll here. (Next time I'm adding the same amt. of celery.) Tossed everything together, added the melted butter & figured if 1c of fresh shredded cheddar is good 2c is going to be Better! right? Anyways this left room for the buttery topping! oh yes I did
So I had 4 guys worshipping me for the rest of the night. Lol

Awesome recipe! i did do some changes as I'm sure many do...1 can of mushroom soup and the can of cream of chicken... i added corn and peas, i didn't have any crackers or panko bread crumbs on hand, but i did run across " shake and bake seasoning" I thought what the heck sprinkled it and it came out amazing!! thanks for the recipe.

Oh. My. Goodness. I made this tonight and it was fabulous; a real hit with my family. I did not have cream of chicken soup, so I substituted with cream of celery soup and it was delicious. Thank you for helping me put together a fabulous meal for my family tonight. I will definitely be serving this dish again in the near future :)

this looks absolutely delicious, and an alternative to tuna noodle casserole.

i don't think it will make it to the oven, as it has all my favorite ingredients. it is now a stove top version, as i will cook the veggies and noodles at the same time!

thank you for sharing!
