Chocolate Chip Blondie Cookie Cups


Yesterday was a lazy day at our house it was really hot outside so we stayed in. The kids helped me out with a lot of stuff that needed to be done so, I thought i would let them help me bake something yummy. 

We decided on "Chocolate Chip Blondie Cookie Cups". I saw this recipe in the All You Magazine about a month back and I have been dying to try it out. It's not your regular bar recipe, but made in muffin tins instead so they are more like cookie cups. Which ever way they are prepared you cant go wrong. 

This recipe calls for regular muffin cups, but we used the mini muffins instead. We also doubled the recipe because it just didn't look like enough for us Ü. I am happy to say that they turned out really good and today as i type this recipe they are all GONE!!! so you cant go wrong with this recipe.



Preheat oven to 375 F Mist a 12 cup muffin tip with cooking spray or line with muffin cups.

In a small bowl, mix flour, baking powder and salt stir with a fork to combine

Melt butter in a medium saucepan over low heat.


PhotobucketRemove from heat and stir in brown sugar. Let cool slightly.

PhotobucketStir in egg and vanilla extract mix together until smooth.

Stir in flour then chocolate chips and nuts. The mixture will look kind of thin but give it just a little time and it will thicken up and look like cookie batter. It's the butter in the recipe it just takes a bit for the dough to set up. By the time you are adding the dough to the cookie liners you will notice how the batter has already changed. We couldn't resist sneaking a taste of batter out of the bowl and tasting it.




add about 1/4 cup mixture to each muffin cup. Or if you are using mini muffins a heaping teaspoon will do. Bake until just set about 14 - 17 minutes for regular size muffin tins and for mini muffins about 10 - 11 minutes until tops are light golden brown and cookie is done.

Remove from oven and cool completely before removing from muffin tins.
~ Enjoy ~ I guarentee they wont last long.

I am on my way to make these. They look easy enough to make quickly and good enough to be gobbled down. The sad part is I that I have to leave out the chocolate. I will make it with nuts and I am sure that will work. I love your site. You have wonderful recipes.

I am sorry I fixed the recipe it is now at the end of my post. You can copy the recipe, right click on your mouse and print and check selection to only get the recipe and not the whole post. I did not insert the print feature as that was just when I started my blog.

hi there,
discovered your blog when i was looking for a cinnamon roll recipe, which i've tried and my family loves it. i have just started baking bread, the kneading part scared me so i have tried to avoid breadmaking, but after your recipe, i am now open to other bread recipes. i may try your french bread rolls next.
for now,i am trying this cookie recipe, i am wondering though,have you got any recipe for something similar to chips ahoy? my kids just love these. do hope you have one.
