Baked Macaroni and Cheese - The Deen Brothers Recipe

When I hear Homemade Macaroni and Cheese I immediately think Comfort Food. It really is just the perfect cheesy casserole around. I usually don't make Macaroni and Cheese from scratch only because I have yet to find a so called Homemade Macaroni and Cheese recipe that I like.

Well.....that is until now! I tried this recipe on a whim and everyone loved it. this recipe is not low fat by any means, but like I always say if you're gonna make it good then you have to go big or go home.

I found this recipe in "The Deen Bros. Recipes from the Road" cookbook. Everyone knows I love their Mama so you gotta love those Deen boys as well. What I like most about this recipe is that it pretty much calls for ingredients that you have on hand.

This recipe was a snap to toss together and baked up really quick.  The only thing negative thing I can say about this dish is that i should of made the full recipe. My family devoured the whole 8 x 8 in pan. I only made a half recipe, because I was unsure if they would like it or not. Boy was I wrong.!!!! Let's get started.

First cook the macaroni according to package directions for al dente pasta, then drain. Preheat oven to 350 F. Grease a 13 x 9 inch baking dish; set aside. Return macaroni to saucepan. While macaroni is hot, add the cheeses to the pan, Cheddar first then add the American cheese and lightly mix together.

Spread the macaroni mixture in the prepared baking dish.

in a separate bowl whisk together the milk, eggs, sour cream, and hot sauce if using

add the butter.

And pour the milk mixture over the macaroni. Bake for 35-40 minutes or until golden brown and bubbling.

Let stand 10 minutes before serving.

This is how delicious the mac and cheese turned out. I cut the recipe below in half and made an 8 x 8 inch size pan. The recipe below is a full recipe for a 13 x 9 inch pan.

The Deen Brothers Baked Macaroni & Cheese
{full recipe for 13 x 9 inch pan}

2 - cups uncooked elbow macaroni
8 - ounces cheddar cheese, shredded (about 2 cups)
8 - ounces american cheese, shredded (about 2 cups)
1 - cup whole or evaporated milk
1/2 - cup sour cream
2 - eggs
1/4 - cup unsalted butter, cut into pieces
1/2 - teaspoon salt
splash of hot sauce. optional

Preheat oven to 350 F. Grease a 13 x 9 inch baking dish; set aside. In a saucepan,
cook macaroni according to package directions (for al dente pasta), drain.

Return drained macaroni to saucepan. While macaroni is hot, add the cheeses to the pan; stir well.

Spread the macaroni mixture in the prepared baking dish. In a bowl, whisk together the milk, sour cream, eggs, butter, salt and hot sauce if using.

Pour the milk mixture over the macaroni.

Bake for 35-40 minutes or until golden brown and bubbling. Let stand for 10 minutes before serving.

Cooks Note: American Cheese does not come shredded. I just stick a couple slices together and shred it myself. It can be a bit messy but worth it in the end. This recipe can easily be lightened up using whole grain pasta, low fat or fat free milk, sour cream and light cheese.

servings: 8

Hi Tina
This is a great recipe. It's exactly how I make mine! Sometimes I will substitute white cheddar & white american for the yellow cheeses just for a different flavor.
Also, sometimes when I want to be real naughty I will put crumbled potato chips on top right before serving.
Thanks for posting this.

With your recipes and your love of pasta - we could be separated at birth! :) This looks delicious and I also love the blue box mac n cheese, reminds me of younger days...but I definitely have to try this one...YUM!
Hi Tina. What a great comfort food recipe. That's how I think of homemade mac n cheese. You did a good job.

Shawna give it a try. The old blue box is good and one of my faves. The homemade version is really good. I was surprised my family at all of it.

Tina,

Question about this recipe - my oven is broken right now :( Parts are on backorder and it may be 2 more weeks. I have the stove top and slow cooker as cooking options. Do you think I could do this in the crock pot and what would you change if anything about ingredients and what about cook time / settings for the crock pot? Thanks for the help!

My dear mother in law made this recipe except did not use sour cream. I never liked mac and cheese until I ate hers and then I craved it when I was expecting my first child!
Thanks for reminding me of her!

Tina..okay this is the second recipe from your site, I am going to make this for my 21 year old. I know this will be a hit because who doesn't like Mac and Cheese? I think your web site is very user friendly and being a busy Texas mom/wife I need a little help. Thanks so much again!!

I have a question..I whipped the eggs, butter, sour cream but the mac n cheese had little flecks of white dots from the sour cream. How do you get it to a more creamy texture? I have made Paula Dean's Mac n Cheese with cheddar cheese soup in the crock pot. It takes longer but no white flecks. It still tastes good, I did add salt and pepper.

To add to my last post...I liked this recipe because it was quick and easy. Paula Dean's takes a long time, you melt the butter and cheeses in a sauce pan then add to crock pot, then you add in sour cream, eggs, milk, cheddar cheese soup. Anyway it is good but I like this one better, I am a flight attendant, gone all the time and just do not have a lot of time in the kitchen. I spend my days home cleaning, paying bills, grocery shopping and working in the yard. Then I am gone again for several days. Now you know my life story. So any quick recipes are a big help. Thanks again.

where do you find american cheese? i only see the kraft singles sold in the store, and not a block of it or shredded like cheddar? help! do you just tear up the american slices instead?
Tina Butler said…
Mamacooks, they dont sell the american cheese shredded you have to do that part yourself. I buy the big block of american cheese sliced at Sams Club in Bulk and seperate into smaller portions. To shred the cheese i take about 2-3 slices and fold them in half and then fold again and shred. It does get a bit messy at the end but it is shreddable.

Thanks so much! i will try your method! I cannot wait to make this mac n cheese recipe, as it looks soooo amazing! Is it still good reheated or best served right from oven? I want to bring it to a potluck but maybe I should bake it there instead of reheating there? what do you suggest?
Tina Butler said…
Oh I dont know how it is reheated. Everytime I have made it my kids have polished off the dish. I think it would be ok as long as it doesnt sit for hours. It is best fresh after it cools down. Good luck and let me know how you like it.

I have come across a very creative dish. This can be given to my kids for tiffin purpose at their school. This would be healthy for them too.

Everything I have tried from your site so far has been excellent - thank you! I am going to make this recipe tonight to go w/ Pioneer Woman's homeade chicken strips. I did not find "shredded" american cheese and did know there was such a thing (I only know of sliced american cheese)? So I just bought a big bag of mild (orange) shredded cheddar, will this work or will it turn out less creamy do you think? Or should I just use a block of velveeta maybe?
Tina Butler said…
I just shred the american cheese slices. I stack them and then shred. It can be a bit messy but it works. I am think shredded velveeta would be a good alternative as well. I think it would add to the creaminess.

Question: The ingredients don't list hot sauce, but it says to add hot sauce along w/everything else. Just a typo?
Tina Butler said…
No the hot sauce is not a typo. It is listed in the ingredient list but it states opional in next to it. So if you want to use it then you can add it. My kids don't like hot sauce so I leave it out.

Instead of shredding American slices, just have someone at the Deli counter at your grocery store cut a big chunk.

I was able to buy Shredded American Cheese. The brand is SunnyAcres and I think I bought it at our local Dollar Tree store for $1.00. It comes in 8 oz. package. They also had Mexican Shredded Cheese.

Thanks for sharing so many good recipes with us.
