These cookies baked up so soft and cake like and smelled wonderful. Be careful and watch them closely. I had to toss out the first tray because they burned on the bottom. I assumed the cookies would get a bit darker on top so I was surprised when the top was light and the bottom was burnt.
Bake these cookie on the top rack of you oven just till they get golden brown on the edges. They will still be a bit light in color on top but they are definitely done. Make sure the cool completely before frosting. All of my kids loved the cookies especially my cookie monster Carson.
They are already asking me to make them again. This time, I used regular milk in the frosting, but next time I'm going to use buttermilk. I didn't want to overwhelm the cookies with to much of a buttermilk flavor until I tested the recipe. Carson told me they looked like cookie clouds. He loved them and that's all that matters.
My baby is a big boy now!!!! Today when I dropped him off at school he kissed my arm and said bye mommy!!!!!!! ugh I'm so sad and happy all at the same time. He did tell me though school is not the same. I asked Carson why? he told me because I wasn't there. Awweee I think I am going to have to make that sweet boy some more cookies.

I made cookies for my little guy's first week of school too, and then I packaged them up in little ziplocs so he could enjoy them for a week or so in lunches!

Lori I would of loved to pack a few in Carsons lunch for the week. But my kiddos ate all of them so fast. I guess they liked them. I am going to make more per their request. I still have more buttermilk left. Ü

Thanks for the hint about not leaving them in too long. Mine looked completely raw but the bottom was brown, so on your advice I took them out of the oven. I thought they were ruined, but they turned out to be absolutely perfect!!
I had leftover icing so I'll make more tomorrow for this week's school lunches!
