I saw this recipe for Candy Corn Cookies at the The Recipe Girl, they were so darn cute I had to make them. I am always on a hunt for a new holiday cookie recipe, especially since Halloween was right around the corner. I thought this would be the perfect treat to make. This recipe was really easy to prepare since it utilizes the Betty Crocker Sugar Cookie Mix. The hardest part of the recipe for me, was kneading the food coloring into the dough. I did get it all over my hands, but no worry it washes right off with soap and water. When I first saw this recipe I thought "to cute" I was so excited seeing those little candy corn cookies. Funny thing is I just noticed the other day that these are the same candy corn cookies on my Kraft Calender right on my refrigerator ugh how did i miss these!
Thank goodness Lori blogged about this recipe on her site or i would of never noticed the recipe on my calender. It must be all the paperwork from school I have attached. LOL I would of missed out on making this fun treat for my kiddos. I made my cookies to look exactly like the little yellow and orange candy corns. You can also make it just like Lori's recipe utilizing chocolate instead of the yellow layer to look like the Harvest Candy Corns. My cookies ended up being mini candy corn cookies, only because i did not read the directions correctly and ended up using a 8x8 inch glass pan instead of a loaf pan so don't make the same mistake as me. oh well that's what i get for not reading and jumping right in with excitement. I did not have any handy helpers today, but they sure were there when they came out of the oven and gave me their stamp of approval. Here are a few pictures of the cookie making process.
Now dont do what i did and that was not read the directions correctly. It states to use a loaf pan and I used a 8x8 inch pan. I dont know why i did that the dough needs to sit in a loaf pan or you will end up with tiny cookies. Mixed in yellow food coloring for the bottom layer
then orange for the middle and regular cookie dough for the top and final layer.
Let sit in the refrigerator for 1 1/2 - 2 hours. Remove dough from pan. Cut crosswise into ¼-inch-thick slices.
Cut each rectangle into 6 or 7 triangular wedges
Lay on ungreased cookie sheet. (I greased mine just a bit) Bake at 375 for 7-9 minutes watch carefully so the white part doesn't turn to brown.
Cool on wire rack
and munch away. These were so fun to make. Next time i think i will do the harvest candy corns and add the chocolate layer just to see what they taste like. These were so yummy.
2 - pouches (1 lb. 1.5oz) Betty crocker sugar cookie mix
1/3 cup butter, each pouch (melted)
2 large eggs
orange paste food color (or yellow/red food coloring mixed together)
also just plain yellow food coloring (for regular candy corn cookies) or
3 oz semi-sweet chocolate chips, melted and cooled slightly (for the harvest candy corns)
Line an 8x4-inch loaf pan with waxed paper, extending paper over sides of pan. In medium bowl, stir cookie mixes, butter and eggs until soft dough forms. On work surface, place 1½ cups of dough. Knead desired amount of orange coloring into dough until color is uniform. Press dough evenly in bottom of pan. Divide remaining dough in half. Gently press one half of remaining dough into pan on top of orange dough. On work surface, knead chocolate into remaining dough until color is uniform or yellow food coloring if making the regular candy corn cookies. Press over plain dough in pan, pressing gently to edge of pan. Refrigerate 1½ to 2 hours or until firm. Preheat oven to 375°F. Remove dough from pan. Cut crosswise into ¼-inch-thick slices. If needed, trim slightly to make perfect rectangles. Cut each rectangle into 6 or 7 triangular wedges. un greased cookie sheet, place wedges 1-inch apart. Bake 7 to 9 minutes or until cookies are set and edges are very light golden brown. Cool 1 minute; remove from cookie sheet. Cool completely. Store in tightly covered container.
