Thanksgiving is sneaking up on us pretty quick only four more days. Things are finally coming to an end at my house for baking and canning. Whew thank goodness. I saw these pretty cranberries at the store and I just had to get some.
We will be going to our families for Thanksgiving . I love to bring some things to help out my mother in law, that way she doesn't have to do everything.
I thought I would make some Homemade Cranberry Sauce. If I don't make it and bring it we will be stuck eating the old jellied cranberry sauce in a can. I mean it's OK, but it reminds me of a big blob of cranberry jello not sauce.
I use to like that stuff in a can myself, that is until I had a tsste of homemade cranberry sauce.I don't know why everyone buys that canned stuff when making it homemade is so simple and easy.
It only takes about 20 minutes from start to finish a bit more if you properly can it like i did. I wanted to make them early so canning them was the best solution. I could eat this stuff straight out of the jar, it's that good.

1 bag of fresh cranberries, sugar
water and orange rind (optional)
In a saucepan, mix water and sugar and heat on medium heat until sugar is dissolved.

add cranberries and bring to a low boil, if using orange rind add that as well.
Stir frequently and reduce heat to keep the sauce at a low boil for about 10 minutes. When the sauce begins to thicken and the cranberries begin to burst remove from heat. Rule of thumb when the cranberries start to pop and burst they are done.
The mixture will thicken as it cools. Place in a serving dish and serve. Or fill in sterilized canning jars and place in a hot water bath and properly process. One bag yielded two half pint jars so you would need to process them for 5 -10 minutes.

Um homemade is best don't buy that canned stuff any longer.
Homemade Cranberry Sauce
1 - 12 ounce bag of fresh or frozen cranberries
1 - cup sugar
1 - cup water
1/2 grated orange rind, optional

Question though...how long would you say it is shelf stable for once canned? About a year like most items? Just curious. Thanks so much.
