I know everyone is busy preparing last minute details and dishes for their Christmas Dinner. I wanted to post this recipe earlier for my Holiday Cranberry Salad.
Since it's not assembled until the night before. I just could not make this any earlier. That's why I am making a last minute recipe post.
There is still time to make this wonderful salad for Christmas Dinner if you have all the ingredients on hand. It is really quite tasty and festive in color. Perfect if you need to take a dish over for a holiday dinner with family or friends.
Holiday Cranberry Salad
1 - 12 package Fresh Cranberries
½ - cup pecan pieces
3 1/2 - cups Mini Marshmallows
1 – 8 oz can Crushed Pineapple (drained)
1 – cup Sugar
1 - pint fresh whipped cream, whipped
Chop cranberries in food processor or blender.
Chop while frozen to prevent splattering.
Mix together cranberries, sugar, pineapple, marshmallows and nuts.
In a separate bowl whip whipping cream until stiff peaks form.
Fold into cranberry mixture and chill overnight.
