Mississippi Mud Brownies are ooey-gooey chewy brownies topped with marshmallows and a homemade chocolate fudge icing.
I did not go into a whole lot of details about this recipe, so I wanted to make sure this recipe didn't buried in all my posts. Today I'm making a separate post just for these wonderful brownies because they really do deserve it.
They were a huge hit at the super bowl party and the whole pan was cleaned out by the end of the night. I actually had to make a second batch the following day, because my husband never did get a brownie.
I love the marshmallow filling and the warm chocolaty icing on top. I think the homemade icing takes these brownies over the top. This recipe uses a boxed brownie mix, so it doesn't get any simpler than that. If you haven't made these brownies you don't know what you're missing.
If you're like me you don't have much patience, so I fill a large bowl with ice water and place the pot with the icing inside the bowl and whisk the icing so it thickens faster. You don't want it really thick or cold. Just mix until it starts to thicken a bit , but is still pourable consistency and warm.

Mix the brownie mix according to the box directions for cake like brownies.
Bake and remove from oven.
It only takes a couple minutes for the marshmallows to puff up. One they look puffy remove from the oven and set aside to cool;
While the brownies are cooling prepare the chocolate icing. In a medium size pot over medium-high heat add the butter, cocoa, water and milk. Bring the mixture to a boil over medium-high heat. Mix together using a wire whisk. Remove from heat and while still hot add the confectioners' sugar, and vanilla. Mix well to blend everything together.
Continue to whisk until the frosting starts to thicken.
Pour frosting evenly over the marshmallows while frosting is still warm . Allow to cool before cutting.

Have you tried them with homemade marshmallows? I can't wait. This sounds like it would an excellent thing to bring to a family potluck during all the coming holidays.

Do you have a good made from scratch chewy style brownie? If so would you share it as I have been looking for a good homemade chewy style brownie for a long time.
Thanks
Kim
Without the frosting though, I heated nutella and poured it over the top like a thick drizzle instead.
Realized afterwards it would have been great with cocoa almonds chopped over the top. But I had it over vanilla ice cream... Such a treat!
