Today is National Peach Cobbler Day! I made this cobbler over the weekend and it was so yummy. Who doesn't like cobbler, peach, cherry, apple blackberry or even strawberry. Whichever flavor it is, it's always a nice treat.
I call this Semi Homemade Peach Cobbler, because the pie crust is not homemade and the peaches are canned instead of fresh. In my opinion there are two types of cobblers. One with a biscuit topping and another using pie crust.
My husband prefers a pie crust cobbler over a biscuit topped. He also likes a double crust crobbler instead of a single top crust. It's really your own preference or what you grew up eating. For me I love them both ways.
If you're wanting a quick dessert or have some canned peaches, this is the perfect recipe. Happy Peach Cobbler Day! Lets get started these are the ingredients you will need: cinnamon, sugar, peaches, cornstarch, double pie crust, butter and cinnamon sugar.
Preheat the oven to 400 degrees. Prepare your pie crust according to package directions. I really like the Betty Crocker and the Jiffy Brand boxed pie crust mix. It is light, flaky and pretty cheap in price.
Add one layer of pie crust to a greased 8 x 8 inch baking dish.
I love canned peaches especially the dole brand they taste the closest to fresh. Drain the peaches and reserve the juice in a medium size pan.
In a medium size pan or bowl mix sugar, cinnamon and cornstarch together.
add the dry mixture to the pan of peach juice. Gradually bring to a boil. Boil 1 minute stirring constantly.
It won't take long to thicken up, so watch closely.
Add the hot mixture to the peaches and
pour into a 1 ½ qt or 8x8 pasty lined baking dish. Dot with butter and sprinkle with cinnamon sugar. (no rule of thumb here as much as you like).
Top with second prepared pie crust and brush with melted butter. Sprinkle with plain or cinnamon. Cut a few slits into the top crust to vent the air.
Bake 25-30 minutes or until golden brown and bubbly.
Let cool and serve with vanilla ice cream.

1 – 29 oz can sliced peaches in heavy sryup
2/3 - cup sugar
2 - tablespoons cornstarch
2 - tablespoons. butter
½ - teaspoon cinnamon
cinnamon sugar
2 - prepared ready made pie crusts.
Preheat oven to 400* Grease baking pan and line with one single pie crust. Drain peaches and reserve liquid.
In a medium size pan mix sugar, cinnamon and cornstarch. Stir in reserved peach juice/syrup.
Gradually bring to a boil. Boil 1 minute stirring constantly. Add peaches and pour into a 1 ½ qt or 8 x 8 pasty lined baking dish.
Dot with butter sprinkle with cinnamon. Top with second crust, brush with melted butter and sprinkle a little cinnamon sugar on top.

And, since you asked, kinda, I don't like them. Have never figured out why unless it's because of cooked fruit maybe. I love fruit, but won't eat pies or cobblers. I am told that I am unAmerican! heehee
