In our house we love anything with chocolate. When we had a cookout last Sunday I wanted something sweet to complete our meal. I didn't have a whole lot of time on my hands, so I thought Chocolate Cobbler would be perfect. This dessert is super simple and something that you can toss together rather quickly and let it bake as you eat. .
Thank goodness I decided on a dessert, because the beef rib tips my husband cooked turned our really tough. So all I had for dinner was a baked potato, grilled veggies and chocolate cobbler! Not the best combination but better than the beef rib tips. Chocolate Cobbler reminds me of a pudding cake, but so much easier to prepare.

I highly recommend adding a big scoop of vanilla ice cream. Chocolate Cobbler isn't anything fancy, but simple is always best especially if you're in a pinch and need a little something sweet. I haven't met anyone that hasn't fell in love with this dessert. Lets get started.
Using an 8×8 baking dish and add 6 tablespoons of butter. You don't have to cut it up. Just toss the butter in your dish. Place the pan in a pre-heated 350 degree oven. This will let the butter melt while we mix up the rest of the ingredients. In a separate bowl add, the self rising flour, 3/4 cup of white sugar and 2 tablespoon of cocoa powder. Stir the dry ingredient to combine.
To the dry ingredients add 2/3 cup of milk and vanilla extract. Stir together really well. Remove the buttered pan from the oven and add the chocolate mixture right into that dish over the butter. The chocolate batter can be a bit thick thick and pretty difficult to spread out evenly. Just spread it around as best as you can.

In a separate bowl; add 1/2 cup of brown sugar, 1/4 cup of white sugar and 1/4 cup of cocoa powder. Mix well. Sprinkle the topping evenly all over the top of your chocolate mixture. Next take 1 1/3 cups of very hot water. You don’t need boiling water, but you do need the water to be really hot. Slowly pour the hot water over the top of the cobbler, so it looks like a nice chocolate bath.
I know it isn't the most pretty site, but trust me when this bakes up you will have a cake like top and a chocolate pudding middle. Carefully place the dish in the oven for 30-35 minutes.You want the cobbler to still be a bit jiggly when you remove it form the oven, because the cobbler continues to cook as it cools.

I baked your girl Paula's Cho. Chip Zucchini Bread yesterday. If zucchini is available you might want to get it a try. Its goooooood.
