Rich chocolate sandwich cookies with creamy vanilla filling stuffed in the middle. These semi-homemade cookies are super easy to make using a devils food cake mix.
These semi-homemade cream filled cookies are sooooooooo good. Rich chocolate sandwich cookies with creamy vanilla filling stuffed in the middle. I found this recipe on Tangled and True a couple weeks back.
The cookie part of this recipe starts with a devils food cake mix and the filling can be made with or without cream cheese. A true chocolate sandwich cookie does not have cream cheese in it but both filling recipes are delicious.

I've included the recipe for both fillings so you can decide which is your favorite. The filling recipe also makes quite a bit so I normally just freeze the leftover filling. These cookies are so delicious and so addicting.
The chocolate cookie part is crisp just like a cookie should be. Some folks say this is a Whoopie pie, but Whoopie pies have more of a soft cake like outside and these are definitely a crisp cookie. I hope you enjoy this treat as much as my family does.

(Vanilla Filling) Cream butter and shortening together. Add vanilla extract and confectioner's sugar slowly until you reach your desired consistency.
To assemble the cookies, in a pastry bag with a 1/2 inch, round tip (you can always use a zip lock bag with a round tip or just use a butter knife) add about a tablespoon of filling into the center of one cookie.
Place another cookie similar in size on top of the filling. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream.

I've enjoyed looking around your site, I'll be back!
I had a recipe for these in a cookbook my mom made and typed out for me, and everything was going terribly wrong!
I'm attempting to make cookies for my fiance for the first time ever, as his valentines day gift, and all I was getting was a running disaster!
I changed one of the ingredients my Mom suggested to yours, and suddenly everything is coming together!
You saved my valentines day, and saved me from another round of tears!
