Everyone loves Pizza especially in our house. I wanted to try my hand and make homemade pizza. I was pressed for time so my Iron Skillet Pizza was out of the question. It would of been just as easy to order pizza, but I had all the ingredients so why not make it.
I remembered seeing a recipe for Quick & Easy Pizza Crust over at Real Mom Kitchen. That was exactly what I needed quick and easy. I made half pepperoni and the other half plain cheese per Carson's request. The dough was really pretty easy to throw together and in no time I had the pizza in the oven baking.
The only thing I did different was my dough ended up resting in the oven longer then the 10 minutes stated. More like 20 minutes because I got busy doing other things. All it did was rise a bit but it went into the pizza pan perfectly. I actually had enough dough to fit into a 13 x 18 in pan. I added corn meal on the bottom for extra crispiness.
I think this is a perfect pizza dough if you are in a pinch for time. I want to purchase one of those professional pizza pans with the grates/holes on the bottom. I think it would make the pizza that much crispier. Everyone enjoyed the pizza!
The dough almost doubled in size in just 20 minutes. I covered the dough with saran wrap and a towel. Then I turned on the oven light and put a bowl of hot water underneath the pizza dough bowl on the bottom oven rack to help it rise faster. (works every time)

Quick & Easy Pizza Dough
1 - 1/4 oz packet of yeast or (2 1/4 teaspoons)
1 - cup warm water
1 - teaspoon sugar
1 - teaspoon salt
2 - tablespoons oil (vegetable or olive)
2 1/2 - cup all purpose flour
2 - tablespoons cornmeal - optional for sprinkling on cookie sheet
Dissolve yeast in warm water and add sugar. Let yeast sit about 10 minutes (you want it good and foamy). Stir in remaining ingredients until blended. Beat vigorously 20 strokes. I removed the dough from the bowl and kneaded it until it was no longer sticky.
I placed the dough in a greased bowl, turning dough to coat all sides. Allow dough to rest 5 minutes ( I let mine sit 20-30 min) in a bowl with saran wrap or a towel over it. Preheat oven to 425, spread dough onto a lightly greased baking sheet sprinkled with corn meal (optional). Top with desired toppings and bake for 20 minutes This makes 1 - 14 inch pizza.
