The Pioneer Womans Comfort Meatballs

Simple meatballs that taste just like little mini meatloaves. Serve along side mashed potatoes or use as an appetizer. This dish also makes a wonderful freezer meal. 
Hi everyone I hope you are having a wonderful weekend. Yesterday was such a beautiful sunny day here in North Texas.We finally got to get outside and and start on our fruit & vegetable garden. Now that the hard work is behind us the waiting game begins.

I cant wait till we start to see some green popping up. I love my garden and look so forward to it every year. I made these wonderful meatballs the other night for dinner and everyone loved them. 

I found this recipe in the The Pioneer Woman's new cookbook. "Recipes from a Accidental Country Girl"Now don't go mistaking these meatballs for Italian meatballs because they are not the same at all. These are more like little meatloaf balls with a tasty sweet and sour sauce. All I can say is these little things are pure comfort food at it's best. Lets get started on the how to!!! 

Start by preheating the oven to 350 degrees. Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. I used my small cookie scoop to form the meatballs. Place sheet in freezer for 5 - 10 minutes. After 5- 10 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour.Brown meatballs in oil until just brown. Remove from pan and place into a baking dish.

Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Remove from oven, let cook and serve. I served mine with mashed potatoes and a veggie.





Pioneer Woman's BBQ Meatballs

Ingredients:

1-½ - pounds ground beef
¾ - cups quick oats (oatmeal)
1 - cup milk
3 - tablespoons very finely minced onions or use dried
1-½ - teaspoon salt
plenty of ground black pepper, to taste
1 - cup all purpose flour, coating for meatballs)
2 - 3 tablespoons canola oil

Sauce:
1 - cup ketchup
2 - tablespoons brown sugar
3 - Tablespoons white vinegar
2 - Tablespoons Worcestershire
1 - dash Tabasco sauce  (I used Louisiana hot sauce)

Directions:
Preheat oven to 350 degrees.Combine all meatball ingredients. 

Roll into medium-small balls and place on a cookie sheet. 

Place sheet in freezer for five minutes.

After 5 - 10 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour. 

Brown meatballs in canola oil until just brown. Place into a baking dish.

Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes.

Serve with mashed potatoes.

my cherry pie is still in the oven ("pi" day today 3.14)so that post is not quite ready yet but I have a good crumb cake that is oh so quick and easy and did I mention yummy?

I've made PW's meatballs as written and they were great! I made them this week (a double batch) and skipped the freezing and skillet steps....just floured, cooked for 10 minutes in oven, then poured the sauce on and cooked the rest of the way. They were perfect! I am planning on using the sauce recipe to pour over a pork roast in the crockpot....can't wait to see how it turns out!

I love just about any kind of meatball. I haven't planted a thing! Some of my flowers are just starting to peek out and it's still down in the 40s at night. Hopefully I'll get started soon, or I'll have nothing to harvest!

Oh! Happy Belated Birthday too!! I must've missed that post. I'm sad that you had to make your own cake though. As much as you cook for your family, somebody should have made you a cake!

Oh Mary as nice as a that is. If I depended on anyone in my house making it, I dont think it would of been edible. LOL I really dont mind because then I can pick the exact cake I want. I hope you get to get out and piddle in your garden soon. I think our cold weather is behind us (fingers crossed)

I'm not a huge meatball gal like in pasta but these look wonderful to snack on. I like Swedish meatballs too.
