I was a bit skeptical when I first saw this recipe at Tried and True Cooking with Heidi only because they were just plain old seasoned chicken legs. Don't get me wrong recipes with just a handful of ingredients are always my favorite ones.
I did like the fact that I didn't have to bread these babies all up before tossing them in the oven. So the simplicity of this recipe is really what caught my eye. This is actually the third time I have made these chicken legs because my kids love them too!!!!

These Easy Peasy Roasted Chicken Legs have become another one of my "go to chicken recipes", so I thought it was time to post this tasty chicken leg recipe. I've seen this recipe pop up on a few blogs so it isn't anything new, but for the folks out there that haven't seen this recipe, I hope you'll give it a try.
For this recipe all you have to do is toss the chicken legs in a large bowl, drizzle with olive oil, add a few spices and toss. Spread the chicken legs onto a baking sheet that has been sprayed with non stick spray and bake until the skin is crispy and the chicken is cooked through.

Easy Peasy Roasted Chicken Legs

Ingredients
- large package of chicken legs (approximately 10 legs)
- olive oil
- salt and pepper to taste
- onion powder, to taste
- garlic powder to taste
- Grill Mates Montreal Steak Seasoning
Instructions
- Preheat oven to 375 F.
- Place chicken legs in large bowl (leave the skin on) and drizzle with olive oil ( the olive oil is what makes the chicken legs so nice and crispy), enough to cover all the legs generously.
- Sprinkle with salt, pepper, onion powder, garlic powder and Montreal seasoning if using.
- Toss the legs around to make sure they get coated with the all of the oil and the seasoning.
- Spread the chicken legs out on a large baking sheet that has been sprayed with non stick baking spray.
- Bake the chicken legs for about 45 minutes - 1 hour (depending on your oven) turning them half way through to ensure crispiness on all sides.
- Remove from oven and cool a bit on the baking sheet before serving.
- You can also bake the chicken legs on a cooking rack that you place inside of your baking sheet, but make sure you spray it really well with non stick spray.
Notes:
If the blood on the ends of the chicken legs bother you the best way to minimize that is to soak them before cooking. You can do this two ways:
- Place the chicken in a large glass bowl and cover with ice water. Soak the chicken for 30 minutes, then drain thoroughly and pat it dry with paper towels. Much of the blood will soak away in the cold water.
- Soak the chicken legs (about 1-2 hours) in cold salt (kosher salt) water (about 2 teaspoons) which helps to remove the blood and will tenderizes the chicken legs.
