This fluffy peach cobbler uses 🍑 fresh in -season peaches and buttermilk, which makes the topping sooooooo fluffy and perfect to sop up all that peach filling.
It's good, but for me that's more like a pie. My favorite way to prepare fruit cobbler is with a buttery, biscuit style topping. Crisp on the outside and fluffy on the inside. Fluffy enough to sop up all that peach goodness. NOW THAT'S COBBLER!
I love buttermilk especially for baking. Buttermilk makes desserts and breading light, fluffy and so delicious. I prefer to use fresh peaches when I make peach cobbler, but I have also used frozen or canned when peaches are out of season.
I get my fresh peaches at our local peach farm (Hams Orchard ) which is located in Terrell Texas. It's only about 30 minutes from our house, so when peaches are in season we can't get there fast enough.
My husband and I come to the orchard for the peaches, but the kids come to the along for the homemade peach and strawberry ice cream. We never leave without getting each of us a serving. The hardest decision is deciding on peach or strawberry so we usually end up getting a swirl so we can have a little of both.
Besides the ice cream they have a wide variety of fruits and vegetables from local farmers. Strawberries, blackberries, cucumbers, tomatoes, homemade pimento cheese spread and salsas. My favorite thing is all the fresh out the oven pies, cobblers and breads.

I can usually find fresh shelled peas out at the orchard as well. This particular day they had black eye peas, purple hull, lady cream peas, fresh green beans and corn. To begin we need to remove the skin off of the peaches. To do this you will need to blanch the peaches first so the skin slides right off. Start by boiling a pot of water, the size of the pot will depend on the number of peaches you have to prepare.
Cut a notch or a X at the top of each peach the drop whole peaches into the rapidly boiling water, making sure they are completely submerged. After about 3 - 5 minutes, remove the peaches carefully with a large slotted spoon and place them directly in a large bowl of ice water.
At this point the skins will slip off easily in your hands, once the peaches are cool enough to handle. You can slice and remove them from the pit. Sprinkle a bit of sugar about 1/2 cup on the peaches and set aside.

Now its time to assemble the cobbler. Place a stick of butter in a 9 x 9 inch baking dish or a casserole dish of equivalent size. Place in the oven and let it melt while the oven is preheating to 350 degrees.
In a large bowl. stir the self-rising flour, sugar, vanilla and buttermilk until combined. Remove the melted butter from the oven. Place the peaches in the dish over the butter. Pour the batter on top of the fruit, making sure to pour it evenly around the dish. Don't forget to cover the corners.

- 2 cups fresh peaches, peeled and sliced
- 1 stick (1/2 cup) real butter, melted
- 1 cup self-rising flour (do not substitute)
- 1 cup sugar, plus extra to sprinkle on fruit
- 1 cup buttermilk, well shaken
- 1 1/2- teaspoon vanilla extract (I use Mexican Vanilla)
Instructions
- Preheat oven to 350 degrees. Blanch the peaches then peel and slice them. (I have added the blanching directions below).
- After slicing sprinkle them with a bit of sugar (about 1/2 cup) and set aside.

Heidi maybe you can find one in Houston. Do a search for local and pick your own orchards in your area. I think pickyouown.org may have something.

Where I live now in Canada, there's a market garden just down the road called Kuhlman's that'll have fresh produce beginning next month(we're a little behind most places here). I've never been before, but I look forward to going and seeing just what they have :)

My man & I picked fresh peaches of a tree we found on the beach (yes on the beach,we were surprised that they grow there) Was looking for a good southern dish using buttermilk and came across yours. WOW was exactly what I wanted to make and more,Took it to a dinner party and it was a hit. I love to cook but most of all bake. I followed your recipe but only had all purpose flour...just mixed it with baking powder and it worked fine...made 2 cobblers one full and one half so did all togeather 1+half and split in the 2 different size dishes. All well and taking the small one to mother in laws today + a bag of fresh peaches for her to bottle. I will get the self rising next time and check out the difference. It was devine,and made me think of home, USA I am from, NC .sure needed a southern fix.Will try to post you a real Kiwi recipe to try. (soon) Thanks Tina
