Good morning everyone. Christmas is only 12 days away are you ready? I'm not, but I'm getting closer to finishing up my Christmas shopping and my holiday baking. Today I wanted to share a recipe for my favorite Strawberry Jell-O Salad.
Have you started on your Christmas Dinner Menu? I have and it includes this yummy Jell-O Salad. Down here in Texas the holidays just wouldn't be the same if you didn't have a jell-o salad on your Thanksgiving and Christmas table.
I got this recipe from my mother in law about 14 years ago and I have been making it ever since. Recently I have changed the recipe up just a bit to suit my kids taste. The original recipe called for shredded American cheese, but I chose to substitute with mini marshmallows.
Now my kids gobble this up. I use anywhere between 1/2 to 3/4 cup marshmallows it all depends on how many you want. I was also thinking that you could play around with the gelatin flavors for a whole different salad.
Strawberry is still my all time favorite but lime, cranberry or even orange is just as yummy.
Maybe you're still looking for another salad or side dish at your Christmas table. If so I think you will love this as much as my family does.
I have included some step by step photos but the full recipe is at the end of this post. Start by mixing the water, sugar and pineapple over low heat until the sugar is dissolved. Add the dry jello and mix to combine.
Place the mixture in the refrigerator for thirty minutes or just until the mixture starts to congeal. Add the pecans and fold in the whipped whipping cream. Add the mini marshmallows and mix lightly to combine.
Refrigerate for at least 2 hours. This is always the hardest part for me. Patience is not one of my best qualities.

Add the mini marshmallows last. Refrigerate at least 2 hours before serving.

A few of my favorite Jell-O Fluff variations:
For the following variations, you will only be substituting the jell-o flavors and fruit combinations.
Mandarin Orange Jell-O Fluff: use orange jell-o and one (11 oz) can of mandarin orange segments (drained) and omit the crushed pineapple.
Pineapple Jell-O Fluff: use pineapple jell-o and one (8 oz) can crushed pineapple (drained).
Pina - Colada Fluff- Use pineapple jell-o and one (8 oz) can crushed or pineapple tidbits (drained), 1/4 teaspoon rum extract and 1/2 cup shredded coconut.
Raspberry Jell-O Fluff: use raspberry jell-o and 1 1/2 cups fresh raspberries.
Lime Jell-O Fluff: use lime jell-o and one (8 oz) can crushed pineapple (drained).
Lemon Jell-O Fluff:use lemon jell-o with or without crushed pineapple. Garnish with lemon slices.
Peach Jell-O Fluff:use peach jell-o with crushed pineapple and garnish with fresh or frozen peach slices.
Pink Stuff!! My grandmother makes this every single Christmas! We also have Green Stuff- which is the lime jello version- I love them both SO much!! :)

That looks deeeelicious. My aunt always make one with lime jello. Yummy!
My MIL made something similar to this for Thanksgiving. Instead of the pineapple, she added a can of the Cranberry sauce (you know the one, you pop it from the can and it still has the can ring marks). It was soooo good! This was all our great-niece would eat for dinner.

I usually don't like anything that's strawberry flavored (except for the real fruit) but Jell-o just did it! It's the only food I eat that's strawberry-flavored.
I'm so happy to see this recipe. "Pink Stuff" has been a staple in my family since I was a little girl. We make it with whipped cream, mini marshmallows, and drained canned fruit. It's easy to "lighten" it up with low sugar fruit and sugar free or fat free Cool Whip. It's even better the next day.

I make mine with just dry jello and cool whip. Mix half a package with 8 oz of cool whip until blended and put in fridge for a few hours. That's it. We call it pink fluffy stuff. We also like strawberry best but I have made it with all flavors for different holidays too.

Yum pink stuff! Always had it at holidays when I was a kid. Ours always had marshmallows in it. Also, ours had a small amount of marichino (sp?) cherries in it too and diced fresh strawberries...mmmmm think I will make this for my son the fruit addict!
We make a recipe like this, but with chunks of angel food cake instead of marshmallows. Tastes like strawberry short cake!

I make a lime jell-o salad that's really good. It has cream cheese in it. I really need to make and get that one posted.
My mother in law makes a green one but it has cottage cheese and mayo in it. I am not to crazy about that one.
