Sour Cream & Cherry Coffee Cake

This cherry swirl coffee cake is a sweet addition to breakfast, brunch, snack or even dessert. 🍒
Saturday I had asked everyone on my Face book fan page to help me choose a sweet treat for our upcoming open house. All of your choices were equally yummy Glazed Lemon Bars, Mexican Wedding Cookies, Chocolate Chip Coffee Cake or a Sour Cream & Cherry Coffee Cake. 

Everyone added their input, but something kept pulling me towards the Sour Cream & Cherry Coffee Cake. So that was the recipe that I decided on. I've made this coffee cake several times and it always turns out so good. If you love cherries than this coffee cake will be such a treat for you. 

One thing about this recipe that is probably going to surprise you is....... this coffee cake uses a white cake mix. You really can't tell at all by the photos. I think the cake mix really gives this coffee cake the perfect sweetness, especially along with the tart from the cherries. 

If cherries aren't your thing then just use a different variety of pie filling. This recipe is so easy and takes hardly any time to pull together. So for everyone who has been waiting for this recipe after my teaser photo on face book. This one's for you!

The pie filling is dropped by spoonfuls over the batter, make sure to swirl it around. If not the pie filling will settle in the middle.

Baked and ready for some icing. I think apple pie filling would be a yummy substitute for cherry. Sprinkle some cinnamon sugar all over the top just before baking. Then after it has cooled finish it off with a simple vanilla icing.


Cut into squares and Enjoy!!!

Sour Cream & Cherry Coffee Cake

This cherry swirl coffee cake is a sweet addition to breakfast, brunch, snack or even dessert. 🍒

Ingredients

Coffee Cake
  • 1 (15.25 ounce) package white cake mix, dry
  • 1 (8 ounce) container sour cream or plain Greek yogurt
  • 3 eggs
  • 1/4 cup water or milk (milk gives it a richer taste)
  • 1  (21 ounce) can cherry pie filling
  • 1/4 cup sliced almonds, optional
Simple Glaze
  • 1 ½ cups powdered sugar
  • 2 tablespoons milk
  • ½  teaspoon vanilla or almond extract

Instructions

  1. Preheat oven to 350. Lightly grease a jelly-roll pan or 9 x 13 inch baking pan. Mix together the sour cream, eggs and water.
  2. Combine with the cake mix. Spread mixture into a greased baking dish and drop the pie filling over the batter in spoonfuls.
  3. Make sure to swirl the pie filling throughout the batter. If not the pie filling will settle in the middle.Bake for 30-40 minutes or until lightly browned and cooked through.
  4. Test with toothpick for doneness. Cool in pan and drizzle with a simple icing if desired.
  5. To prepare the icing blend all the ingredients together until smooth. Drizzle over coffee cake and garnish with sliced almonds.

Notes:

To make a apple version just use apple pie filling in place of cherry pie, sprinkle some brown sugar (about 1/4 cup) and cinnamon over the pie filling before swirling, omit the slivered almonds, and use vanilla extract instead of almond for the icing. Or you can do a caramel apple pie filling and add toasted pecans and cinnamon sugar on top.

Did I tell you what my 19 year old son said while the cake was baking yesterday. He came into the kitchen and asked if I had anything for breakfast. I said, "You can have some of that." I pointed at the oven. He pushed on the light and made what sounded like a negative groan sound. Alarmed I asked, "What's wrong?! What does it look like?!" He said, "It looks like AWESOME!!" Oh good you scared me.

Made this yesterday, used cherry cause that's what was in pantry, also added a teaspoon of almond extract cause we like almond, very easy ~ a HUGE winner. This is now one my *Go To* favorites for sure! My pantry will always have a white cake mix and can of fruit filling.

I made the cake for my husband because he loves cherries. I am not a fan of cherries. But when I taste this cake, It felt like I was in heaven. This cake was so good. Even my son do not care for cherries either. But he loved it. We loved it so much, that my husband wanted me to make anoter one the next day. We ate the cake up in one day. Thanks.

So glad you posted this recipe. It was incredibly quick, easy, and delicious. I substituted devil's food cake mix because I love chocolate and cherries paired, but I intend to try this with a wide variety of cake mix flavors and pie fillings. This is a standard around here after just one try.

This was so easy and turned out delicious. I used mostly sour cream and some greek yogurt. Also used almond milk and added a tsp. of vanilla. Used the glaze but I think whipped cream would be good on this too. Thanks again for the recipe.
