Rice Pilaf is one of the easiest rice recipes to make. Rice Pilaf is a rice dish in which the raw rice is first simmered in an oil or butter, then cooked with water or broth, and sometimes meat, poultry, fish or shellfish. I've been making this recipe for so long that I can't even remember where I got it.
What I love most about this recipe is how simple and versatile it is. This recipe is also very forgiving on what veggies can be added. I like to toss in everything listed, onions, bell pepper, celery, carrots and mushrooms. Of course if you have someone that dislikes a few of those ingredients just leave them out.

To start, saute' the vegetables and the together until the rice is lightly brown and the onion is translucent in color.
Add the chicken broth, bring the mixture to a boil, cover and reduce heat to low and simmer on low for 20 minutes or until all the liquid is absorbed.
Fluff with a fork and enjoy.
