Grilled Hawaiian Chicken & Chocolate Chip Cookie Bowls

Fathers Day is tomorrow have you planned out what you're cooking for dad? At our house instead of going out to eat we usually just plan to make one of my husbands favorite meals at home. Breakfast on the other hand is a special treat, so the kids will serve him breakfast in bed or we will take him out for a breakfast of his choice. It's really all up to him.

As a Walmart Mom I was challenged to come up with an inexpensive Fathers Day Meal for $30. When I was thinking of what I wanted to make I immediately thought of grilling. Anything cooked on the grill is always a huge hit in our house. So off to Walmart I went and this is what I came up with for our Fathers Day menu.

Grilled Hawaiian Chicken. Thai Coconut Rice, Grilled Corn on the Cob and Fresh Bakery Bread.  

For dessert I made these easy Chocolate Chip Cookie Bowls W/Vanilla Ice Cream. A meal just wouldn't be a meal if you didn't finish it off with something sweet.

Dessert was easy peasy since we used refrigerated chocolate chip cookie dough. You can also substitute with your favorite homemade chocolate chip cookie recipe. I purchased the large 32 ounce cookie roll dough which yielded 8 cookie bowls.

To make the cookie bowls just cut and press 1/2 cup cookie dough into each (3 x 1 1/2 in ) ramekin. 
Spray them with baking spray just a bit first. Bake at 350 degrees for 18-20 minutes or until the tops are golden brown. 

Let cool for 10 minutes and serve warm with a scoop of vanilla ice cream. Delicious is all I can say about these cookie bowls. This was Carson's favorite part of the meal because after his first bite he looked over at me and gave me a thumbs up!

Everyone loved the meal including my husband. Plus we came in under budget, so that was awesome. We definitely could not of went out to eat and fed our entire family for $23.00. What special meal do you have planned for Fathers Day?

Hawaiian Grilled Chicken

Grilled chicken with the flavors of soy sauce, coconut milk, brown sugar, garlic, green onions and spices.
Prep time: 4 HourCook time: 10 MinTotal time: 4 H & 10 M

Ingredients

  • 2 - pounds of boneless skinless chicken thighs
  • 1 - cup soy sauce
  • 1 - cup coconut milk
  • 3/4 - cup water
  • 3/4 - cup brown sugar
  • 3 - green onions, chopped
  • 1/2 -teaspoon minced garlic
  • 1 - teaspoon fresh ginger, chopped
  • 1/2 - teaspoon of sesame oil
  • salt & pepper to taste

Instructions

  1. Mix soy sauce, water, brown sugar, onions, garlic, ginger, sesame oil, coconut milk and salt & pepper in a large bowl or large zip lock bag.
  2. Marinade chicken for at least 4 hours or overnight.
  3. Grill chicken at a low heat so that the marinade does not burn for 5-7 minutes per side or until done.
  4. Serve with coconut rice and garnish with green onions.

Thai Coconut Rice

Thai Coconut Rice

Jasmine rice and coconut toasted in coconut oil and cooked in coconut milk, sugar and water.

Ingredients

  • 1 - cup jasmine or Long Grain rice, uncooked & rinsed
  • 1 - tablespoon canola or coconut oil
  • 3/4 - cup coconut milk (half of a 13 ounce can)
  • 1 1/4 - cups water
  • 2 - 3 teaspoons sugar
  • salt & pepper to taste
  • 3 - tablespoons sweetened coconut, toasted

Instructions

  1. Rinse the rice to remove the starch using a strainer. This will keep the rice from becoming gummy. Over medium heat add the oil to the bottom of a deep-sided pot.
  2. Make sure the pot has a tight fitting lid (this is a must here). Add the rice and toast for about 5 minutes (just as you do for Spanish rice). Add the coconut milk, water, and sugar.
  3. Bring to a boil. Cover and reduce heat to low. Cook for 20 minutes stirring occasionally the first 5 minutes of cooking time.
  4. After 20 minutes turn off and remove from the heat. Cover with a dish towel and let the pot of rice rest on the stove for about 10 minutes.
  5. Fluff with a fork and add a the toasted coconut. Garnish with additional toasted coconut.

Notes

How to toast coconut: add the coconut to a microwave safe plate (make sure it is dry) and toasted the coconut over medium heat until lightly browned. Spread out flat on plate until ready to use.
