Country Classics and Farmhouse Cooking is my all time favorite food. This tasty cookbook is packed with over 100 tried and true home style favorites.
Each recipe has a yummy full color photo (my favorite part). Farmhouse Favorites reminds us of memories at Grandma's house sitting on the porch and sipping lemonade. Her meals were always made with love and those treasured recipes were passed down from one generation to the next. Those are the mouth-watering, tried & true classics where Gooseberry Patch got their inspiration for this cookbook.
There are 5 different chapters included in this cookbook: Break of Day Breakfasts, Garden-Fresh Soups & Salads, Family Dinner Favorites, Blue-Ribbon Desserts and Classic Country Canning.
A few of my favorite recipes are, Blueberry French Toast, Ham & Cheese Biscuits, Shrimp & Grits, Cheesy Corn Chowder, Slow Cooker Chicken & Dumpling, Pulled Pork Barbecue, Homemade Ranch Dressing and a soon to try recipe for Jalapeno Jelly.
The bright colors of this Tortellini Salad immediately grabbed my attention from the Garden-Fresh Soups & Salad chapter. This yummy salad is packed full of all my favorite garden vegetables.
Utilizing store bought refrigerated tortellini and Italian dressing make this salad a snap to prepare. This one is definitely the one to make for your next summer barbecue. My daughter and I had this salad polished off in 2 days.

The Root Beer Float Cake from the Blue Ribbon Desserts chapter was the next one on my list. If you love Root Beer than you will love this cake. Especially the yummy icing that drips down the side. Next time I will double the icing recipe, because I felt it needed just a bit more. We all loved this cake and gobbled it right up.
Included at the end of the Classic Country Canning Chapter are these cute little Homespun Canning Labels pictured above. I can't wait to use these for holidays gifts throughout the year.

Tortellini Salad
1 - 16 oz package refrigerated cheese tortellini, uncooked
2 - green peppers, seeded & chopped
2 - cups cherry tomatoes, halved
1 - cucumber, chopped
1 - 6 oz can sliced black olives, drained
1 - 16 oz bottle light Italian dressing
1 - cup grated Parmesan cheese
Cook tortellini according to package directions.; drain and rinse with cold water. Transfer to a large bowl; let cool in refrigerator. Once tortellini is cool, mix in peppers, tomatoes and olives. Stir in salad dressing to taste and cheese just before serving. Recipe yields 4 servings.
Root Beer Float Cake
1 - cup sugar
1/2 - cup butter, softened
1/2 - teaspoon vanilla extract
2 - eggs, beaten
2 - cups all purpose flour
1 - tablespoon baking powder
1 - teaspoon salt
2/3 - cup root beer
Preheat oven to 375 degrees. Combine all ingredients in a large bowl. Blend with an electric mixer on low speed; beat for 3 minutes on medium speed.
Pour into a greased and floured 8x8 inch baking pan. Bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean. Spread frosting over cooled cake.
Frosting:
1/4 - cup butter, softened
1/8 - teaspoon salt
2 - cups powdered sugar
2 - 4 tablespoons milk
1/3 - cup cold root beer
In a bowl beat together all ingredients except root beer. Add root beer; beat to desired consistency. Frost on cooled cake.
