Red, White & Blue Skillet Cobbler

If you're looking for something sweet to round off your 4th of July meal this grilled skillet cobbler is sure to please.    
Independence Day is one of my favorite holidays. We usually spend it together with friends and family grilling out, enjoying summer foods and watching Fire Works at nightfall. I love blueberries and I love strawberries, but I've never indulged them together in a dessert.

Ripe blueberries and strawberries are a treat on their own, but add them to a cobbler, and you have a yummy dessert fitting for summer or any patriotic holiday.
July 4th is just around the corner, so this Red, White & Blue Cobbler is a great option.

A couple weeks ago I attended Walmarts annual Shareholders meeting and I had the pleasure of meeting Robyn Medlin Lindars from the Grill Grrrl Blog. Not only did I learn a few things about grilling, but I also enjoyed this yummy cobbler. As soon as I got my first bite I knew immediately that I had to make it.

When Walmart asked me to share something in honor of 4th of July this
patriotic Red, White and Blue Cobbler was perfect. If you're looking for something sweet to round off your 4th of July meal this cobbler recipe is sure to please.    

Walmart had berries on sale, so I grabbed a couple containers. The red and blue color of the strawberries and blueberries are so beautiful together. Start by adding the berries to a large bowl, combine the coconut, lemon juice, lemon zest, sugar and vanilla. Let the berry mixture macerate for at least 10 minutes.

In a separate bowl mix the batter with the egg and water. Coat the cast iron skillet with one tablespoon of butter or coconut oil, so the cobbler does not stick. Add the berry mixture. Next, add the batter. Stir the berry mixture and batter with a spoon a few times so some of the berries make it to the top. 

Bake on the grill or in the oven for 25 - 30 minutes or until the fruit is bubbly and the cake has turned a golden color.  Let cool 5 minutes then serve. I love that cobbler can be baked in the oven or by using a outdoor grill. Grilling is the perfect option when you don't want to heat up the whole house by using the oven. Serve with ice cream or whipping cream and enjoy! Thanks Robyn my whole family loved the cobbler.

Too bad this doesn't have some instructions for cooking if you don't have a cast iron skillet. It really sounds and looks wonderful.

@Simplyred, It's a skillet cobbler so a cast iron skillet is used. By using a skillet you can bake it in your oven or on a outdoor grill. I'm sure you could improvise and bake this in a 9" x 9" x 2" rectangular pan in the oven.

I just bought a cast iron wok, up next - a skillet! This look SO yummy and it's so simple. I'm thinking about using almond flour in mine.

Sweetened coconut? Are you referring to coconut flakes? Coconut milk? Coconut oil?
