Pretzel Caramel Chip Cookies

Sweet & Salty Chocolate Chip Cookies packed with caramel bits, chocolate chips, butterscotch chips and pretzel pieces. 
I've had these Pretzel Caramel Chip Cookies on my to bake list for quite a while now. I came across this recipe last year on Pinterest and couldn't wait to make them. I love sweet and salty, so I knew these cookies would be nothing less than fabulous.

This isn't your regular chocolate chip cookie. These cookies are packed with caramel bits, pretzel pieces, and two types of chips, chocolate and butterscotch. Everything all mixed together is a match made in heaven! 


My whole family seriously polished off these cookies in two days, so I have declared these as our new favorite cookie. These cookies were so awesome that more than likely they will be ending up on my Christmas Cookie trays this year.

Speaking of baking cookies do you use parchment paper to cook and bake with? I do and I'm super excited about the new pre-cut parchment baking sheets from Reynolds? I was not aware of these new sheets until Reynolds sent me a package to bake with.  

I'm always up for anything that makes my life just a little easier in the kitchen, and these new Reynolds Non Stick Parchment Baking Sheets do not disappoint. Each sheet is pre-cut pieces of parchment paper sized to fit most standard baking sheets. For my baking pans they fit perfectly and no rolling of the paper.  

love using parchment paper, because it makes clean up is a snap, but I hate fighting with the roll because the sheets never lay flat. No problem with these new baking sheets, because they come right out of the box flat! Now I don't have to fight or cut the parchment paper roll anymore.


Each sheet is non stick, oven safe and fits snug onto your baking sheet (fits most standard baking sheets).  

Your cookies will cook evenly and slide right off the sheet without sticking or breaking. These new baking sheets will come in very handy when the holidays roll around. These sheets are perfect for candy making, cookie baking, decorating, rolling out dough and roasting veggies.

Each box contains 22 sheets and is priced at approximately $3.50. You can find these parchment cookie baking sheets at your local Walmart with all the plastic wrap and aluminum foil.

Pretzel Chip Cookies

Pretzel Chip Cookies

Sweet & Salty Chocolate Chip Cookies packed with caramel bits, chocolate chips, butterscotch chips and pretzel pieces.

Ingredients

  • 1/2 - cup (1 stick) butter, softened
  • 1/4 cup + 2 tablespoons sugar
  • 1/4 cup + 2 tablespoons brown sugar
  • 1/2 - teaspoon vanilla extract
  • 1 - egg
  • 1/2 - teaspoon salt
  • 1/2 - teaspoon baking soda
  • 1 1/2 - cups all purpose flour
  • 3/4 - cup stick pretzels, broken into thirds
  • 1/2 - cup kraft caramel bits
  • 1/4 - cup butterscotch chips
  • 1/4 - cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Using a stand mixer or electric hand mixer, cream the butter and the sugars. Add the vanilla and egg. Mix and scrape the sides of the bowl.
  2. In a small bowl combine the salt, baking soda and flour. Gradually add to the wet mixture. Mix until combined.
  3. Add the pretzel pieces, caramel bits and chips. Mix together using a spatula. Using a cookie scoop spoon the mixture onto a baking sheet that has been lined with parchment paper or non stick parchment cookie sheets.
  4. Bake at 350 degrees for 11-12 minutes or until lightly golden brown. Remove from baking sheet and cool completely on a wire rack.

Hey Tina! I did NOT know that Reynolds made PRE-cut parchment paper! I hate the ROLL too! Now they just need to make the pre-cut for round cake pans:) Oh yeah, could you, like, FEDEX me some of those cookies. I would like some NOW with my coffee please!

LOL These cookies are crazy good, so there would be none left to ship. I guess until they come out with round sheets we will just have to cut these. I hate the battle of the parchment roll.

Tina, something I ran across by accident....
there is a cake decorating store in my city and they carry parchment sheets precut to fit the same pan you used. They are very inexpensive 50 for $3.95. So if you have a cake store near by you may want to give them a call to see if they carry them too.

In answer to Anonymous ?
I will mix up a double batch only I will greeze part of the cookie dough itself by forming a log onto waxed paper, wrapping well and storing in the freezer for later use. I don't like freezing baked cookies as sometimes I will forget about them or they end up getting a freezer taste to them.

I hope it's not a silly question, but should I use salted or unsalted butter? I've baked lots of cookies, but it's not always clear about the unsalted or salted butter as I've used recipes that called for wither or.

Yes you can make them ahead of time. The second day ours cookies were still crunchy.

I tried the baking sheets for the first time, along with this recipe. The baking sheets were a hit; the recipe, not so much. My family thought these cookies were just "OK".

I did substitute margarine for the butter (it was all I had at the time) so if I do make them again I would want to use butter to see if that's what would make the difference.

What happened? My cookies came out dry. I lightly creamed the butter and sugar. Was it under creamed? I will put a glaze on them to add moisture. Did anyone else have this problem?
