Rich chocolate cocoa cookies dipped in white chocolate, and sprinkled with crushed peppermint candies.
Everyone loves chocolate, so I thought these cookies were the perfect choice. Plus this recipe comes from the Pioneer Woman so I knew it had to be good. The cookie dough reminds me of rich chocolate fudge.
Once the cookies have baked and completely cooled each cookie is dipped halfway into melted white chocolate, and rolled in crushed peppermint candies. Everyone will love the chocolate-peppermint combination making them the perfect Christmas treat.

Chocolate Candy Cane Cookies
Ingredients
2 - sticks (1 cup) butter, slightly softened
1 1/2 cups powdered sugar
1 - egg
2 - teaspoons vanilla extract
2 1/2 - cups all purpose flour
1/2 - cup unsweetened cocoa powder
1 - teaspoon salt
4 oz (4 squares) vanilla almond bark (prefer Plymouth Pantry)
3/4 - cup peppermint candies or candy canes, crushed
Directions:
Cream softened butter with powder sugar. Add egg and vanilla and mix to combine. Add the dry ingredients and mix together until the dough comes together (mixture will resemble thick fudge).
Wrap the dough in plastic wrap and refrigerate for 2 hours. Unwrap the peppermint candies and place them in a plastic bag. Using a mallet or hammer crush the candies into a semi-small pieces.
Preheat oven to 375 degrees. Roll cookie dough into walnut size pieces and place on a cookie sheet that has been sprayed with baking spray.

Gently press the balls down with a glass with a smooth surface. Bake cookies for 7-9 minutes, being careful not to burn. Cookies will remain the same size after baking.
Remove from oven and place cookies on a cooling rack to cool completely. Place crushed candies in a bowl. Melt the vanilla almond bark in the microwave. Dip each cookie into the almond bark, covering half way down.
Immediately cover the cookie with crushed peppermint on both sides. Set cookies on parchment paper until almond bark is set.
