Happy Sunday everyone!!! Growing up, my mom always made sure we ate dinner together as a family, and it was always at the table. Now that I have my own family I too have always made it a high priority to eat together even when our kids were younger.
Family meal time gives us the opportunity to chat about our day, see how everyone is doing and catch up on school activities. This time together also opens up the line of communication which is super important, especially with teenagers.

I'm doing my part to help crush hunger by sharing a meal that my family and I enjoyed. Pasta and Mexican food are two of my favorite things, so I combined them together and came up with these easy Beef Enchilada Roll-Ups that I think you'll love. I made an easy homemade enchilada sauce using Red Golds Chili Ready Tomatoes and a few simple ingredients. Let's get started and I will show you how easy this dish comes together.
Start by boiling the lasagna noodles in a large pot of lightly salted water, until al dente. Drain the noodles and lay flat on a baking sheet. Brown ground beef in a large skillet over medium heat.
Add the chopped onion, minced garlic and one tablespoon cilantro. Drain grease. Add dry taco seasoning and mix to combine. Add the cream cheese and mix until the cream cheese is completely melted. Set mixture aside while you prepare the enchilada sauce.
Preheat the oven to 350 degrees. Pour one cup of the enchilada sauce in the bottom of an 8 x 8 inch square baking pan.
Spread 2 -3 tablespoons of meat mixture down the center of each lasagna noodle and sprinkle with a bit of cheddar cheese on top and roll up tightly. Continue rolling the remaining noodles and with the meat mixture.
Place lasagna rolls in prepared baking dish and pour the remaining enchilada sauce over the rolls. Cover with aluminum foil and bake in a 350 degree oven for 35 minutes or until bubbly.
Remove foil add remaining one cup of cheese and place back in the oven until the cheese melts (about 5 minutes).
Serve with additional chopped cilantro before serving.
