Mini Meatballs tucked inside bread cups made with Rhodes Frozen Dinner rolls, topped with pizza sauce and shredded Italian cheese.
To make these easy meatball cups I used my favorite Rhodes Frozen Dinner Rolls, pre- cooked frozen meatballs, pizza sauce and cheese. The best part about this recipe is you don't even have to let the dough rise. Just thaw, shape the cups, fill with meatballs, sauce and cheese and then bake.
My kids love these little meatball cups and they're also delicious reheated the next day. Another delicious flavor variation is Mini Barbecue Meatball Cups using, meatballs, barbecue sauce and cheddar-jack cheese.

Mini Meatball Cups
Mini Meatballs tucked inside bread cups made with Rhodes Frozen Dinner rolls, topped with pizza sauce and shredded Italian cheese.

Ingredients
- 12 frozen dinner rolls (such as Rhodes), thawed but still cold
- 24 Mini frozen fully cooked Italian meatballs, thawed
- 1/2 cup pizza or marina sauce
- 3/4 cup shredded Italian Cheese Blend
- Fresh or dried parsley for garnish
Instructions
- Thaw 12 Rhodes dinner rolls to room temperature on a baking sheet that has been spray with non-stick spray or lined with parchment paper. You want the rolls thawed, but still cold.
- Preheat oven to 350 degrees. Spray a 24 count mini muffin tray with non-stick baking spray.
- Using kitchen shears, cut each dinner roll in half making 24 pieces.
- Flatten each dough piece into a circle and press into each mini muffin cup, pressing up the sides to form into a little cup. Continue with remaining dough pieces.
- Sprinkle about 1/2 teaspoon shredded cheese into each dough cup. Place one mini meatball on top of cheese, lightly pressing the meatball down.
- Bake for 10 minutes. Remove from oven and top with one teaspoon pizza sauce and additional shredded cheese.
- Return pan to oven and bake an additional 10 minutes or until the cups are golden brown and the cheese is bubbly.
- Garnish with a sprinkle of fresh or dried parsley.
