A pasta style Greek salad bursting with flavor featuring Birds Eye® Veggie Made™ Riced Cauliflower.
Today I have a deliciously easy salad recipe to share with you and a little giveaway at the end of this post. I've been wanting to jump on the riced cauliflower train for quite some time, especially since it's a great low-carb rice substitute, but the idea of making my own riced cauliflower seems like a lot of work.
When I saw that Birds Eye® Veggie Made™ started making frozen riced cauliflower, I knew it was time to try it, so I picked up a few bags at my local grocery store. I had a couple summer salad recipes that I've been wanting to make that called for rice or pasta, but I thought the riced cauliflower would be a healthier option.
I was excited to get started and chose a Cauliflower Rice Greek Salad to make first. This Greek salad is simple to make, because it starts with frozen riced cauliflower that cooks in in a steam fresh package in the microwave and then just leave it to cool while you cut up the remainder of the vegetables.
What I like most is that the veggie made packages take 4-5 minutes to cook in the microwave and that's it. No additional prep work is needed, no grating and no additional cooking!!! I used the original riced cauliflower for this recipe, but you can also use the roasted garlic or herb and Italian cheese to add even more flavor.
From start to finish this salad took about 20 minutes to pull together and I was so surprised at how delicious the riced cauliflower tasted. my daughter couldn't even tell that cauliflower was added to the salad, so that was a win for me.
Growing up back in the 70's, I remember my mom using Birds Eye® Frozen Vegetables, but the packaging looked very different than it does today. Mom used to get the little frozen boxes and use them in a variety of recipes, so it's no surprise that now that I have my own family that I'm using Birds Eye frozen vegetables as well.

Cauliflower Rice Greek Salad
A pasta style Greek salad bursting with flavor featuring Birds Eye® Veggie Made™ Riced Cauliflower.

Ingredients
- 1 (10 ounce) package Riced Cauliflower
- 1 cup cucumbers, diced
- 3/4 cup grape or cherry tomatoes, halved
- 1/2 cup green bell pepper, chopped
- 1/2 cup red bell pepper, chopped
- 2 green onions, chopped
- 4 ounces black olives, sliced
- 1 (8 ounce) jar marinated artichoke hearts, drained and cut into pieces
- 1/2 cup wishbone EVOO lemon - honey herb dressing
- splash of fresh lemon juice
- salt and pepper, to taste
- 1/4 cup fresh parsley, roughly chopped
- 1/2 cup crumbled feta cheese
Instructions
- Steam the riced cauliflower according to package directions. Remove from package and place in a bowl to cool for about 20 minutes.
- Chop and cut all of the veggies and artichoke hearts and set aside.
- In a med-large bowl add the cooled riced cauliflower and all of the veggies, artichochokes and black olives. Toss the mixture to combine.
- Add the lemon herb dressing, splash of lemon juice, parsley, salt and pepper and crumbled feta cheese.
- Lightly toss to combine. Refrigerate salad at least one hour before serving. Sprinkle with additional feta cheese before serving.

You know, I have never bought or even tried a Bird's Eye product. About the only thing I get from the freezer area is either cool whip or ice cream and that isn't very often.
