CopyKat Panda Express Chow Mein Noodles (with Chicken)

Chow mein noodles are a great side dish or serve with chicken and make it a meal.  
Panda Express is famous for their Chow mein noodles and for good reason....... they're so delicious! Whenever my daughter and I go  shopping we usually make a day of it and stop for lunch at Panda. 
My daughter orders orange chicken and I usually choose Mushroom Chicken or a Teriyaki Chicken Bowl. 

No matter what we order, we always get chow mein noodles as a side dish. I guess you could say it's one of our many guilty pleasures. Chow Mein is a stir-fried noodle dish filled with cabbage, onions and celery tossed together in a delicious brown sauce. Chow mein noodles make a great side dish with Chinese food or serve with chicken and make it a meal.

Copykat recipes have always been a favorite of mine. And when you find a good one that's always a plus. We love these noodles so much that I like to add cooked chicken and turn this side dish into a meal.

I have made this recipe several times because it's so good. The first time I used thin spaghetti because that was all I had on hand, but after that, I used chow mein or (Pancit Canton Noodles). 

To start, heat the sesame oil in a large skillet or wok pan over medium-high heat. Season chicken with Simply Asian seasoning, salt and pepper. Add chicken and cook until golden and cooked through, about  7 to 8 minutes. 

I like to use boneless skinless chicken thighs for this recipe, but boneless chicken breasts can also be used. Transfer chicken to a plate and set aside.  

In a large pot of boiling water, add the thin spaghetti noodles and cook until al dente; rinse with cold water and drain well. Set cooked noodles aside If using Chow mein noodles, cook according to package directions. 

In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger and pepper; set aside.

Heat 2 tablespoons olive oil in a large skillet over medium high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes. 

Stir in cabbage and cook until heated through, about 1 minute. 

Stir in cooked noodles, tossing to combine. 

Add the cooked chicken back into the pan and toss to combine. 

Add the soy sauce mixture, tossing to combine and cook about 2-3 minutes until the mixture is blended and the noodles and chicken are heated through. 

Garnish with green onions and sesame seeds (optional) before serving. Serve warm.
