Happy Saturday friends!!!
I hope everyone is having a great weekend. It's been quite some time since publishing my last issue of My Texas Table. Sometimes life gets in the way and then a few things get put onto the back burner. No worries though, because I have promised myself to get it together and start publishing my monthly newsletters again. I've actually missed doing it, so let's get started.
Spring 💮 has definitely sprung here in North Texas and the weather has been gorgeous! We've had a few rainy days, but it's been great for our raised bed garden and fruit trees. For me spring is all about fresh fruit, berries and bold colors, so this month's newsletter is filled with some of our favorite spring dessert recipes to help you celebrate the new season.

Last week I came across this Peaches & Cream Pie and this Pineapple Pretzel Salad while scrolling through my Face book feed. If you love peaches, I think this pie would be perfect! The pineapple pretzel salad would be delicious for you next cookout or get-together. Click on the links above to visit Buns in My Oven and The Mostly Homemade Mom to get the full recipes.
You only need 5 ingredients to make these delicious sweet and spicy Candied Jalapenos also know as Cowboy Candy. If you've never had candied jalapenos they are sliced fresh jalapeno that are simmered in a sweet simple syrup. They're the perfect combination of sweet and spicy and delicious on grilled burgers, hot dogs, barbecue sandwiches or served as an appetizer. Click here to view the full recipe.

Garden Update: Before I go I want to share a photo and the progress of our spring garden thus far. Everything seems to be coming along nicely. We planted onions and garlic in the fall so they should be ready early summer. We have Kenebec potatoes, green (bush) beans, Boston pickler cucumbers, cantaloupes, purple hull peas, one zucchini and one yellow squash plant and some tomatoes. We have 2 smaller raised beds with herbs, red potatoes, more garlic and peppers.
Our fruit trees already have tiny apples, pears and peaches, so we're really excited about getting some fruit this year. Last year wasn't a good year for our fruit trees. New to our backyard this year are blackberries and Elderberries. We purchased Elderberry cuttings in March of 2020 and they were planted and rooted in Solo cups. Here we are just a year later and they are thriving so well in the ground and growing weekly. I'm excited to see how everything grows this year. I will try my best to keep up with our garden progress!!! I hope everyone has a fabulous weekend!!!
