These no bake energy balls are easy to make with, oatmeal, wheat germ, ground flax seed, peanut butter, honey and chocolate chips.
Today I want to share a recipe for my new favorite snack! My daughter shared this recipe for these No Bake Energy Balls and I was instantly hooked. I think I've made this recipe three or four times over the last month. They're simple, require no baking and packed full of wholesome ingredients.
These energy balls are perfect for a healthy snack, lunch box treat or grab and go breakfast. I like to pair mine with a fruit smoothie if I want something quick. This recipe is made with oatmeal, wheat germ, flax seed, peanut butter, honey and chocolate chips giving them a good mix of protein, fiber and omega - 3 fatty acids.
I don't recommend using a natural peanut butter in this recipe because the consistency can be dry due to the lack of oils in the peanut butter. If you're allergic to peanuts, Sun butter is a good alternative. You can use old fashioned oats or quick oats for this recipe, I like to use old fashioned because they have a chewier texture.
I love that everything mixes together in one bowl, I like to use my kitchen aid mixer (a hand mixer will also work) to combine all the ingredients.
Roll into 1 inch balls and refrigerate for at least 1 hour before eating. Store leftovers in an air tight container in the refrigerate for up to one week. They never last that long at our house.

This recipe works just fine without the wheat germ. It is just a healthy additive on my part.
