Tater Candy - Tiny Honey Glazed Potatoes

Small potatoes are steamed then sauteed in a delicious honey - butter sauce until the potatoes are coated with a sticky, caramelized glaze.
Potatoes are definitely one of my favorite vegetables to harvest from our backyard garden. Here in North Texas we have great luck growing Kennebec, yellow gold and red potatoes. Potatoes are also a staple in our house, so when we have a good crop it's always exciting. One of my favorite parts of harvesting homegrown potatoes is seeing all those cute, little tiny potatoes. Tiny potatoes have a mild flavor with a little sweetness and cook up super fast. 

These mini - potatoes can be steamed, roasted or fried. One of my favorite ways to cook tiny potatoes is to make Tater Candy! Tater candy is sweet, slightly salty and oh so delicious! I found this recipe on Hollis & Nancy's Homestead last year and I've been making it ever since. Small potatoes are steamed then sauteed in a delicious honey - butter sauce until the potatoes are coated with a sticky, caramelized glaze.

Steaming the tiny potatoes keeps all the flavor and nutrients right inside. Tater Candy is a great side dish for just about any dinner meal or served with eggs, bacon or sausage for breakfast. Whether it's dinner or breakfast, I think you're going to love them. Let's get started on the recipe.

Wash the potatoes under cold water. Make sure to use potatoes that are similar in size so they cook evenly. If you have a few that are bigger, cut the potatoes in half. Steam the potatoes in a bowl in the microwave or use a pot and a steamer basket. 

Steam the potatoes for 5-10 minute or until fork tender, set aside. Add the butter and honey to a medium-large skillet and melt together. Add the water and bring the mixture to a simmer and add the potatoes. Simmer the potatoes and stir frequently. 

Continue to simmer the potatoes tossing the frequently (about 5-10 minutes) or until the potatoes start to caramelize and get sticky.

I love these tater candies. I have never heard of this. I enjoy eating potatoes in different ways. I look forward to making this as a side dish for my next gathering. Thanks for sharing,it looks delicious. Shalom
