Strawberry Lemonade Concentrate

A sweet and tart Strawberry Lemonade Concentrate, made with fresh lemons and home canned to enjoy fresh lemonade throughout the year. 🍓🍋
This Strawberry Lemonade Concentrate is like summer in a jar. With just 3 ingredients, and a little advance preparation, you can have a refreshing lemonade at a moment's notice. That's right my friends, this strawberry - lemonade concentrate has just 3 ingredients; strawberries, lemons and sugar. The best part about this lemonade concentrate is how simple it is to make and store. 


My favorite way to store this concentrate is by canning it, so we can enjoy fresh strawberry lemonade well past the strawberry season. Maybe you have some strawberries that are bit past their prime if so than you must make this concentrate. It makes the best strawberry lemonade, which is tart, delicious and so refreshing. I just know you're going to love this simple recipe. 

INGREDIENTS TO MAKE CONCENTRATE 

  • 🍓  Fresh Strawberries: Fresh strawberries are best, but you can also use frozen.  
  • 🍋  Fresh Lemons: Freshly squeezed lemon juice is a must (not the bottled stuff)
  • 🍯  Sugar or Honey: I use pure cane sugar, but you can also use honey. 
  • 🥫 Canning Supplies: Hot Water Bath Canner, Canning lids, Rings and Jar lifter

INSTRUCTIONS ON HOW TO MAKE CONCENTRATE
 
  • Prepare your hot water bath canner. You do not need to simmer the lids or rings in hot water. Wash the jars in hot - soapy water and sterilize
  • Prepare the strawberry puree by placing the hulled strawberries in a blender or food processor and puree until the berries are liquified. Juice the lemons and set aside.  
  • Add the strawberry puree, lemon juice and sugar to a large sauce pan. 
  • Heat the mixture to 190 - 200 degrees. Skim off any foam. 
  • Remove from heat and ladle the concentrate into clean HOT jars make sure to leave 1/2 inch head space. 
  • Wipe the rims with a damp paper towel dipped into white vinegar. Add a lid and ring to each jar and tighten to finger tip tight (this means that once the ring stops turning freely, it is tight enough to prevent buckling of the lids in the canner)
  • Add jars to hot water bath canner and process covered for 15 minutes (in a light boil). 
  • Remove jars and place on the counter lined with a dish towel. Do not remove rings. 
  • Leave jars undisturbed for 12 hours and then check to make sure each jar has sealed. 
  • Store sealed jars in a cool, dark pantry or cupboard and use concentrate within 12-18 months. 

I use my Kitchenaid juicer attachment to juice my lemons. This makes things so much easier and I get all the juice out of each lemon. 

This concentrate stores beautifully and taste as good as the day it was canned!!! 

To serve add 1 jar lemonade concentrate with 2 parts water, club soda or seltzer water. Serve over ice.
