Potatoes and onions are usually one of the first vegetables that we harvest from our summer garden, followed by fresh green beans. As soon as they're harvested, this One Pot Sausage, Green Beans & Potatoes is the first meal that we make. Kielbasa or smoked sausage with fresh garden green beans, potatoes and onions, simmered together in chicken stock and spices until tender. For us, this simple meal is true comfort food that the whole family enjoys.
As gardeners, it's so satisfying to sit back and enjoy all the fruits of our labor. We grow green beans every year to preserve as well as for fresh eating. By far our favorite green bean variety is the Contender bush bean. Contender beans are tender, sweet and tolerate the Texas heat very well. They also yield a large crop, so by summer's end, I normally home can and preserve about 35 jars of green beans to feed us for the year.
Home grown onions are another crop that does very well in our raised beds. This year we ended up with 50 bulbs of onions.
I used red potatoes for this recipe, but you can use any potato you have on hand. This comforting one pot smoked sausage, green bean and potato meal calls for just a few simple ingredients.
HERE'S WHAT YOU WILL NEED:
- Smoked Sausage or Kielbasa
- Fresh Green Beans
- Fresh Potatoes (red or white)
- Bacon Grease
- Onion
- Minced Garlic
- Chicken Broth
- Salt and Pepper
- Garlic Powder
- Onion Powder
- Tony Chachere's Cajun Seasoning
HOW TO MAKE SMOKED SAUSAGE, GREEN BEANS & POTATOES
This is just an overview of the recipe; the full ingredients and instructions are in the recipe card at the end of this post. First, gather all of your ingredients. Make sure to trim your green beans, wash all the produce and cut up the potatoes and onions.
Melt 1 tablespoon bacon grease in a large skillet of pot over medium high heat. Add the onions and Saute` until translucent in color.
Add the potatoes and mix to combine.
Saute all the vegetables for about 5 minutes. Add the minced garlic about 3-4 after the potatoes and beans so it doesn't burn.
Add the broth or stock and seasoning. Simmer on medium heat until the potatoes and green beans are tender, about 25 minutes.
Add the smoked sausage or kielbasa about half way through the cooking time. You can lightly brown the sausage first or just toss it in. Browning the sausage a bit first adds great flavor to the broth. It just depends on how much time I have.
Continue cooking until the potatoes are fork tender and the green beans are cooked through. Remove from heat, ladle into bowls and season with salt and pepper. Serve with a side of cornbread or warm rolls.
