The Best Soft & Fluffy Dinner Rolls

Super soft - homemade dinner rolls in less than 2 hours. This is the perfect dinner roll recipe for your holiday meal or Sunday dinner! 
Soft and fluffy dinner rolls are the perfect addition to any meal. These homemade rolls are baked until golden brown and then finished off with melted butter when they're hot from the oven. I served these rolls for Thanksgiving and Christmas dinner, and they got rave reviews. They are so good that I have decided that they're my new go-to dinner rolls. 

These delicious rolls are rich in flavor and lightly sweetened with honey (you can also use maple syrup). The combination of the egg, milk and butter yields a beautiful golden color. These dinner rolls are also freezer friendly. Just assemble, shape and freeze. When you're ready to bake the dinner rolls, just thaw, rise and bake at your convenience.  

I found this recipe on Cooking con Claudia  back in October and they really are the best, fluffy dinner rolls. Below is just a quick recipe overview as always the full recipe and instructions are included the recipe card at the end of this post. 

How to make these Dinner Rolls! 

To start, in a large microwavable bowl or measuring cup add the milk, honey, shortening and butter. Microwave for 2 minutes and then mix to combine. Set the milk mixture aside for about 2-4 minutes to cool down just a bit. Using a stand mixer with the dough hook, add the flour, yeast, and salt. Mix on the lowest setting to combine. Slowly add the warm milk mixture and blend on the lowest speed for 2-3 minutes or until the dough releases from the sides of the bowl. Adjust the speed to the second setting and let the dough knead for 8 minutes.

 Remove the dough to a bowl and knead on the counter for about 2 minutes and then shape into a ball. Add the dough ball to a greased bowl. 

Cover and let the dough rise in a warm place until the dough doubles in size (about 45 minutes). Lightly punch the dough down and place on the counter. 

Divide the dough into 21-23 equal pieces (I use a food scale). Shape into round rolls. Place the rolls into a greased pan and cover with plastic wrap that has been sprayed with non stick spray. 

Let the rolls rise in a warm place until they double in size (about 45 . min)

Brush the rolls with and egg wash and bake for 12 minutes. Rotate the rolls and bake and additional 12 minutes. If baking the rolls in a disposable aluminum pan, place the aluminum pan on a baking sheet before placing the pan in the oven.  

Remove rolls from the oven and brush with melted butter before serving.

I really want to make these to go with the instapot beans but my daughter is allergic to dairy and eggs. The dairy I find pretty easy to substitute but eggs not so much. I'll let you know how the beans turn out, they're very similar to my navy bean recipe.

Have you tried forming these into individual rolls instead of pan rolls? I would like to make these for Thanksgiving and I think they would be a little easier to serve. Regardless, I am making them to go with some chili this weekend. Yummy!
